Sorry I just kind of disappeared there for a few days but this plague sort of overtook my body and I have been bundling up on my couch at home, watching all the very best of Netflix and drinking lots of tea, popping lots of Cold-FX and doing what sick people doing eating lots of soup! Rather that not share something with you all (since it had been a few days), I thought I would come on here today to share what I’m calling budget-friendly pho.
So here’s the thing: pho is already fairly cheap to order/deliver to your house to begin with. However if you’re feeling adventurous and want to make your own then I would suggest my recipe, for the following reasons:
(1) It gets you active and moving, when you feel like you can’t do anything at all
(2) Some of the recipe items you may already have in your pantry
(3) The total recipe cost is $15 and should have tons of leftovers (a bonus!)
WHAT YOU WILL NEED:
1 onion – ($0.75)
1 container of low-sodium chicken broth – ($1.25)
1 package of Mr. Noodles – (0.25)
green onions (2 or 3, roughly chopped) – ($1.00)
ginger (up to you how much you’d like, chopped) – ($0.40)
garlic (i put in 4 cloves, you can put in as much as you like) – ($1.00)
1 lemon and lime ($0.75)
1 cup of frozen edamame beans ($3.50)
1/4 cup of soya sauce ($2.50)
2 teaspoons of Huy Fong Foods Chili Garlic Sauce (add more if you like it spicy) ($4.00)
1/2 cup of water (as needed)
beef (slice very thinly) ($6.00)
HOW TO COOK IT:
Take a empty bowl and a chopping board
Chop your onion, green onion, garlic and ginger – as needed – and put into the bowl.
In a pot, on the stovetop – heat up some olive oil or canola oil (your choice)
From there, dump all your chopped items from the bowl into the pot and stir over low-heat until they become soft.
On a separate chopping board, slice the beef into thin strips. The recipe does not call for beef, but you could substitute it for firm tofu rather.
Once the meat has been thinly sliced, dump this into the pot and give it a stir.
From here – dump in the container of broth, 1/4 cup of soya sauce and 2 teaspoons of Huy Fong Foods Chili Garlic Sauce.
You’ll turn the burner up to high-heat and wait for everything to come to a boil.
Once the soup comes to a boil, dump in the Mr. Noodles (leaving out the flavour packaging) and add in water as needed.
This is where you’ll taste to see if the soup needs more chili garlic sauce or more soy and add as needed. Slice 1 lime and 1 lemon and squeeze into soup for acidity.
Add in 1 cup of frozen edamame beans.
Let the soup boil for 5-8 minutes and you should be ready to serve!
So if you feels a cold coming up or if you feel like just trying to make your own budget-friendly pho at home – then try mine out. My partner said it tasted pretty great and I know that if he says it’s okay, then it means it’s pretty great. Sometimes I think the best recipe creations come through when you least expect it.
